Swedish Chicken |
Last week I spent time with my uncle & aunt in Colorado & ate more good food than I've had in years. My aunt is a great cook. One of the dishes she made was Swedish Meatballs. It was really good though for the record, I'm not much on meatballs unless I make them myself. I always question what's in them. I know it's strange.
So today, I decided to make some but with chicken. I modified a recipe I found online & it was pretty good. So here goes:
Swedish Chicken ?
2 medium chicken breasts
Egg noodles
Sauce:
1 can cream of mushroom soup
1 cup chicken broth (Chicken flavored Better than Bullion)
2 T sour cream
1/2 small onion
1 cup mushrooms
Salt & Pepper to taste
1 T corn starch
Cooked chicken breasts in air fryer for 20 minutes, turning over once. I spritzed with vegetable oil & salted. Then I cut into bite size pieces
In skillet, I mixed soup, broth, onion, mushrooms. I added the cornstarch to 2 T of water & mixed, then added to sauce to thicken. I cooked til boiling & then added chicken & cooked for 7 minutes.
I served over noodles.
Makes 2 servings.
