Peach Cobbler



New recipe.   Quite yummy.  Should have taken a picture.


Peach Cobbler 

Cobbler:

3/4 Cup butter, separated

3/4 cups sugar

1 1/2 tsp vanilla

1/2 cup milk

1 cup flour

Dash salt

1 TSP baking powder

3 cups of canned peaches, drained (2 cans)

Topping:

1/4 cup sugar

1/2 tsp cinnamon

1 TBSP corn starch

1/4 cup boiling water

Melt 1/4 cup butter in 8x8 baking pan.  I put in pan to melt while oven is heating up.  Drain peaches, pour into butter.

In mixer, cream butter,sugar & vanilla.  Add milk, flour, salt, baking powder.  Spread mixture over peaches.

Combind sugar, cinnamon, corn starch & spread over mixture.  Take boiling water & pour over top of mixture.

Bake 375 for 40 minutes til golden brown.  

Mine was a little darker than it needed to be at 30 minutes.  I put a piece over foil to try to slow down browning while rest of cobbler finished cooking. Next time I'll put foil on at start & uncover the last 20 minutes.

Loved the taste...would have been better with a scoop of vanilla ice cream!
